Tropical Burst Flavour Gum

Our revamped tropical flavouring is a harmonious fusion of guava, grapefruit, mango, and passionfruit. The new-and-improved, natural formulation captures the sun-soaked essence of these vibrant fruits.

Sweetness is key to flavour perception and the principal factor in creating a long-lasting piece of gum. But a key issue when using sweeteners in sugar-free chewing gum is that the sweetness fades too quickly. Our Matrix Encapsulation technology helps high-intensity sweeteners last longer, making it the ideal solution for chewing gum.

Lemon & Black Pepper Flavour Gum

Our refreshing lemon flavouring gets a boost from a pinch of black pepper. Our studies show that the black pepper increases the longevity and intensity of the lemon flavour, creating a longer lasting experience.

Both the lemon and black pepper flavourings in this gum are FTNF/FTNS (From the Named Fruit/Source), meaning that at least 95% of the flavouring has to come from the source in question and allows manufacturers to use images of that ingredient on their packaging.

This gum was inspired by our work with Jing Feng, a PhD student at the University of Nottingham. Jing is exploring the potential of using encapsulated ingredients in chewing gum to restore a lost sense of taste or smell. Through this project, Jing and the research team hope to stimulate multiple senses through trigeminal stimuli, using ingredients such as capsicum for a heating effect.

During her placement week at TasteTech in May 2023, Jing created a variety of gums, including a lemon and black pepper variety. After conducting taste trials, we found that the black pepper has a significant effect on the perceived duration of the lemon flavour, as shown on the graph below.

 

Mint Flavour Gum with Caffeine

This innovative gum showcases TasteTech’s superior encapsulation technology, resulting in a prolonged chewing experience. Boasting 50mg of caffeine, it delivers a sustained energy boost for an extended period.

This gum contains FTNS spearmint and peppermint flavourings. It also demonstrates the sustained-release flavour properties of matrix encapsulation. Matrix encapsulated flavourings have a lipid coating, so the flavour is gradually released in the mouth. This makes them perfect for longer-lasting chewing gum flavours and for masking the bitter tastes associated with functional ingredients like caffeine.

StabilisedMentholPlus

Our flagship menthol product offers a wide range of benefits, including intense flavour impact and excellent dispersion. At 93% menthol, it’s up to 5 times stronger than spray dried equivalents. StabilisedMentholPlus is a free-flowing powder that is easy to dose, and will not re-crystallise in storage.

We’ve solved the problems associated with processing large menthol crystals, by making a fine menthol powder that is resistant to re-crystallisation. StabilisedMentholPlus contains 93% natural menthol, meaning it can be used as a direct replacement for menthol crystals.

Another traditional method for manufacturing menthol in powder form is to use a spray drying process, but this requires the use of a large amount of carrier, usually starches, gum acacia (E414) or a combination thereof. Spray dry menthol normally only contains 20% menthol making it 5 times weaker than StabilisedMentholPlus.

By using our encapsulation technology, our customers are able to provide a greater impact with a lower cost in use, thanks to the higher level of active ingredient.
